In 2009 I planted another small vineyard, atop a hill made up completely by marl (a shist-like rock) at an elevation of 360 mt. (1181 feet).
Here too, the training system is the free-standing tree, but this time, it “leans” against a trellis with a density of 9000 vines per hectare. Sella dell’Acuto is a wine made solely with grapes picked in the vineyard by the same name.
The wine-making process is practically the same as Dodo’s. In the end, the wine is quite different from Dodo. It’s the rocky soil that gives Sella dell’Acuto its vitality, minerality, intensity, and remarkable freshness. The name of the wine comes from John Hawkwood (Giovanni l’Acuto in Italian) who lived inside the nearby castle.
