It’s a very enjoyable white wine, made with a very fresh base from Malvasia harvested in late August and pressed immediately. This base is subsequently blended with the wine produced by the harvest of Trebbiano, carried out when berries are starting to brown.
For this second harvest, the juice remains in contact with the skins for a few days before the pressing. This wine is ready in the spring following the vintage. Because of its spontaneity, freshness, and acidity, it has the right “kick” (scossa, in Italian) to be the perfect summer white.

VENDEMMIA: First harvest at the end of August, second one in mid-September
VINIFICAZIONE: In stainless steel vats with native yeast, with a light pressing for the first harvest. Light maceration on the skins for the second vintage
AFFINAMENTO: The wines from the two harvests rest separately in stainless steel vats for 7 months, at which point they are blended, then aged 2 more months in the bottle before release (the wine is unfiltered)
